Roast potatoes with rosemary & garlic


Ingredients
Potatoes (without the skin)
Chicken stock
Rosemary
Salt & pepper
Garlic
Butter
Cook the potatoes (sliced) in a pot of chicken stock. This will allow the potatoes to absorb the flavor. In a hot pan, add knobs of butter (there will be a lovely foam), add the potatoes, rosemary and garlic. Fry till lovely golden brown. Sprinkle salt & pepper.

Lightly seared tuna with dash of ginger


Ingredients
Tuna (sushi grade)
Sesame oil
Young ginger
Soy sauce
Coat the tuna with sesame oil. Then sear it on all sides on a hot non-stick pan. Leave it to rest before slicing into bite size. Serve it with grated young ginger with a dash of soy sauce. Serve as an appetizer!

Baby spinach with goats cheese & pine nuts!


Ingredients
Baby spinach
Goats cheese or feta cheese
Pine nuts (lightly toasted on hot pan)
Salad dressing (olive oil & honey mustard)
Salt & pepper
Prepare the salad dressing by mixing the olive oil, honey mustard and vinegar (champagne, white wine, etc works).
Mix the baby spinach with the dressing. Sprinkle pine nuts and goats cheese !

Chicken & mushroom


Ingredients
Chicken (wings, thighs, breast - up to you!)
Garlic (diced)
Thick fungus
Spring onion, ginger
Chinese mushroom
Sesame oil
Soya sauce & dark sauce
Oyster sauce

In a hot pan, add sesame oil. Fry the garlic and ginger till fragrant. In the meanwhile, marinate the chicken with all the sauces. Pour into the pan and fry for a while. Add water to create the sauce. Cook till chicken is cooked (meat comes off easily from the bone). Add spring onions to garnish! Lovely !

Spaghetti with mushroom, garlic and ham


Ingredients
Spaghetti
Garlic
Mushroom
Ham
Cherry Tomatoes

This is another spaghetti recipe. Simply cook the spaghetti (al dente). In a hot pan, add olive oil and fry garlic, mushrooms. Add chili for spicyness. Once the pasta is cooked, drain and stir in the sauce.

Steam cod fish with roast garlic!

Delicious ! That's all I can say...

Ingredients
Cod steak
Roast garlic
Soy sauce
Chili

Steam the cod fish for ~5 minutes. At the same time, prepare the sauce. In a hot pan, pour some olive oil. Then fry diced garlic in the oil till golden brown. Remove from the pan and add in soy sauce. Once fish is ready, pour the sauce over the fish and sprinkle cut chili.

Bak Kut Teh

Ingredients
Spare pork ribs (you can use chicken as well)Pack of bak kut teh spices
One whole bulb of garlic (unpeeled)
Mushroom (chinese or kamchamku)
Black peppercorn, soy sauce
Tofu puff

Boil 1.5 soup bowl of water in a pot. Add the bulb of garlic and bak kut teh spices. Add as well black pepper corn and soya sauce. Once it's boiled, add the spare ribs.


Continue to boil until the soup starts to color and taste of the spices. Add the tofu puff in the end. Boil for another5 minutes before serving with a bowl of rice, green vegetables and soy sauce with chili.

Cheese Roasted Garlic Tortellini

Another recipe easily cooked in 10 minutes should you be having a late dinner.

Ingredients
Frozen tortellini (cheese roasted garlic or other flavours), fresh basil leaves
Tomato paste, Garlic diced
Brown mushroom (sliced)
Salt & pepper

Boil a pot of water with a dash of olive oil and a sprinkle of salt. Pour in the tortellini (no need to defrost) and boil for 8 minutes. Meanwhile, heat up a non-stick pan with olive oil.

Stir fry diced garlic and sliced mushroom for a bit. Then add in the tomato sauce and a dash of pepper/salt. Once the sauce is heated, add in the tortellini and stir in well with the sauce. Serve and enjoy !

Tomyam noodle fried fish

Here's a new way of enjoying tomyam noodle..not bad..... well, you tend to get more creative when you're cooking for 1 person

Ingredients
Any sliced fish (garoupa, seabass, etc)
Tomyam noodle (instant), Egg

Cook your instant tomyam noodle...(everyone knows how to cook instant noodle with various varieties.. I hope! =). Heat up olive oil (or any oil) in a non stick pan. Flavour the fish with salt and pepper. Pat it dry before placing the fish (skin side) on the pan. Don't touch it!!! Let it fry for a while till the skin is crisp.
Turn it over and fry for another 3 minutes.

Once the noodles are ready, pour in the egg and then boil for a while...then serve with the fried fish...clearly western cooking meets asian fast food !!

Brocolli Spaghetti

Another version of spaghetti, for those who loves brocolli !


Ingredients
Brocolli (cut into small size)
Garlic (diced)
Cherry tomatoes (sliced)
Sausages (sliced)
Extra virgin olive oil
Salt & pepper

Boil the spaghetti in a pot full of boiling water (add a dash of olive oil and salt). Fry the sausages in extra virgin olive oil till crispy. Add the garlic, cherry tomatoes and brocolli. Stir fry for a bit till the brocolli is cooked - don't over do it otherwise it'll be soft ! Taste great when it's crunchy. Once the spaghetti is cooked (al dente), pour it into the pan and stir. Season with salt and pepper to taste. Enjoy!
