Bangers and mash

Yummy is all I can say. Freshly made gourmet sausages are always the best!

Ingredients
Lamb garlic sausages
Onions finely sliced
Balsamic vinegar
Chicken stock
Potatoes (Russett)
Butter, baby peas

Fry the onions in a pot till soft and golden. Add balsamic vinegar and cook till evaporate. Add in chicken stock and cook till reduced to a gravy texture. Parboil the potatoes till soft, add peas at the last minute. Drain. Add butter, salt, pepper and milk. Mash till smooth. Grill the sausages till cooked throughly. Serve the sausages on mash potatoes with the onion gravy. Delish!!!

Ginger cookies!

I always love the taste of ginger cookies. So took the chance to bake my very own, luckily it turned out pretty good!

Ingredients
1/4 cup butter
1/2 cup brown sugar
1/4 cup crystalized ginger finely chopped
1 cup self raising flour
1/2 teaspoon baking powder
1/2 teaspoon ground ginger & cinnamon
1 egg

Whisk the dry ingredients till well mixed (flour, baking powder, cinnamon & ginger). Beat the egg, butter and sugar till well mixed. Pour in the dry mixture till form a dough. Make small round doughs the size of one tablespoon and coat it with sugar. Place on baking tray and bake in oven for 15 minutes at 180 Degrees Celcius.

Raisin scones

This is my first try at baking a scone. Not bad!

Ingredients
1 cup of self raising flour
1/2 teaspoon of baking powder
20 ml milk
1 egg
1/4 cup butter
1/4 cup raisins soaked in orange juice

Using a food processor, blitz the butter, flour and baking powder. It should look like bread crumbs. Then pour into a mixing bowl and make a well at the center. In another bowl, beat the eggs, milk and then add the raisins (drained). Pour the egg mixture into the flour mixture and mix till it becomes a soft dry dough. On a floured surface, roll till 3/4 inch thick. Use a cookie cutter to make six even circles. Brushit lightly with milk and bake in oven for 15 minutes at 205 Degrees Celcius. Let it cool on a rack and serve with your favourite jam, butter and fresh whipped cream.

Chicken Snitzel with salsa and wedges

Here's something that's simple to make and would be a hit with your kids!

Ingredients
Chicken breast
Bread crumbs flavored with garlic, herbs (parsley)
Potatoes (sliced into wedges)

On a board, flatten the chicken breast till evenly thin. Then coat it with egg wash followed with the bread crumbs. Fry it on a non stick pan with a non flavored oil till crispy on both sides. For the potatoes, first parboil it and then coat it in olive oil, salt, pepper and rosemary. Place it in a tray in the oven at 220 celcius on the top of the oven. Roast it till crispy. Serve with spicy home made salsa.

Juicy rib eye steak with fine beans

This is my first try at steak. The ingredients are quite simple though.

Ingredients
Rib eye steak
Lemon zest
Olive oli
Garlic
Rosemary
Fine beans
Pine nuts

Marinate the steak for an hour with a mixture of garlic, lemon zest, rosemary and olive oil. Season the steak well. On a hot grill, place the steak for about 3-4 minutes each side. Remove and coat with a mixture of lemon juice, garlic and mint leaves. Leave it to rest before serving with a salad of fine beans coated in butter sauce.
