Big Breakfast!

Long queues at the restaurant for Sunday brunch? Well, make your very own with simple yet delicious ingredients


Ingredients (serves 2)
2 large eggs
Chorizo sausage
Bacon (6 slices)
Button mushrooms (6)
Vine ripened cherry tomatoes
Parmesan cheese
Slices of bread (toasted)

On a pan, heat up olive oil and a knob of butter. Once butter is melted, pour in the eggs. Cook till formed on one side, add in the cheese. Fold and cook for a bit before removing - ensuring the inside are still soft. Cook the rest - sausages, bacon, mushroom and cherry tomatoes. Season the mushroom with salt & pepper - cook till moisture can be seen. Cherry tomatoes - remove once skin is broken. Serve with warm toast!!

Here are 2 simple pizza toppings you can use for a quick delicious meal!


Ingredients
Pizza base (home made)
Parmesan, mozarella cheese

Chorizo pizza!
Chorizo sausages (sliced)
Basil leaves
Cherry tomatoes
Olives
Seafood pizza!
Tiger prawns
Green peas
Garlic
Red Chili

Heat up the oven to 230 celcius. Spread tomato paste over the pizza base (leave the sides). Arrange the ingredients and place the cheese last. Place pizza on a rack at the top of the oven. Cook for 15 minutes!

Pan fried breaded fish fillet

If your kids love fish & chips, here's a healthier option which is pan fried vs. deep fried!


Ingredients
Any fish fillet
Bread crumbs
Herbs (thyme)
Egg
Potatoes
Peas

Prepare the bread crumbs mixture by mixing bread crumbs, salt, pepper and thyme. Place it on a place. Crack and egg and place in another plate. Prepare the fish by removing any bones and pat it dry. Season the fish with salt and pepper.

For the potatoes, cut it into quarters (skin removed) and parboil in pot of hot salted water. Once cooked, remove water and let it steam a bit. In a oven proof tray, add a glug of olive oil, salt, pepper, garlic bulbs. Pour in the potatoes and mix well. Place in the oven - top level at 200 Degrees. Roast till crispy.

Heat up olive oil in a non-stick pan. Take the fish, dip into the egg both sides and then coat with the bread mix evenly. Place on the non-stick pan till golden brown on both sides.

Serve with peas, a quarter of lemon and potatoes!

Guinness Lamb Pie!

Now, this may take in total 3 hours to make but believe me, it's worth the effort once you get it right!


Ingredients
1 can of Guinness beer
Lamb cutlets
Peas , Rosemary
1 spoon of flour, Onion, garlic
Carrot, Puff pastry
Parmesan cheese, butter

Prepare your lamb by cutting it into bite size. Remove all fat and skin. Season it with salt and pepper. In an oven proof pot, fry the carrots, onions, butter, garlic and rosemary. Once fragrant, add the lamb and fry a while before pouring in the Guinness (just enough to cover). Bring to boil and then place into the oven (200 Degrees). Cover it and cook for 2.5 hours (removing in after 1.5 hour to stir). Once the meat is tender, stir in the cheese.. remove it and let it rest.

Prepare your puff pastry (you can get this at any supermarket - frozen). Roll it on a flour dusted surface and then score it. Pour the filling into an ovenproof dish, till almost full and then cover it with the puff pastry. Do add egg wash before placing into the oven. Cook for 40 minutes till puff pastry is all fluff up and brown.

Serve with peas! Delicious!
