Tomato salsa pasta

Simple pasta with goodness of tomatoes, cucumber and herbs!

Ingredients
Mini shell pasta
Tomatoes, cucumber
Basil, mint, chili
Wine vinegar

Cook the pasta till al dente. Drain. Chop up the tomatoes, cucumber into small size. Season with olive oil, salt, pepper and wine vinegar. Add chili for heat. Mix well. Pour in the pasta and mix well. Serve with toasted ciabatta.

Chicken with beer butter sauce

Here's another favourite of mine if you want something simple yet delicious


Ingredients
Chicken breast
A can of beer
Tomatoes, Asparagus
Bacon
Butter
Potatoes, peas

Season the chicken with salt, pepper. In a non-stick pan, pour a dash of olive oil. Once hot, pan fry the chicken breast together with the bacon. Once it's golden brown, add the asparagus and tomatoes. Pour in the beer and add a knob of butter. Remove the chicken breast and serve on plate. Cook the sauce a bit till reduced and pour over the chicken. For the potatoes mash - boil potatoes and peas till soft. Drain the water and then pour in milk, add a knob of butter. Season with salt & pepper. Mash it.

Roast pork loin with balsamic vinegar potatoes

My first time doing this. Turn out not bad I must say! Lovely meal for the family on a Sunday!


Ingredients
Pork loin
Rosemary, fennel seeds
Onion, garlic, potatoes
Balsamic vinegar

Season the pork loin with the mixture of Rosemary, fennel, salt and pepper. In a roasting tray, pour a dash of police oil and fry the pork - fat side first till golden. Then leave in the oven to roast for 1 hour at 200 Celcius. In the meantime, in another roasting tray, add oil, knob of butter, rosemary. Pour in the cooked potatoes and mix till potatoes are coated with the mixture. Put in the oven and roast for an hour or till crispy.

Remove pork from oven and let it rest for 10-15 mins before slicing thinly.

Cranberry muffin

All made by my wife and son...so I've no clue how it's been made or the ingredients =)) but it sure tastes yummylicious!
