Squid pasta with Chardonnay sauce

Here's a nice one, spicy and refreshing!

Ingredients
Spaghetti
Squids (cut into rings)
2 chili padi (small red chili)
Fennel (finely diced), garlic
A glass of white wine (Riesling, Chardonnay)

Cook your spaghetti al dente in a pot of boiling water seasoned with salt and olive oil. While it's cooking, stir fry the garlic, fennel in a pan with olive oil. Once cooked, add in the squid and fry a bit before adding in the wine. Season with salt, pepper and cook till the sauce is halved. Add in the red chili. Drain the spaghetti and pour into the sauce. Mix evenly and serve immediately. Best eaten with a glass of cold white wine!

Hey Mike, for seafood, I always love to go with clams (with stock), parsley, tomato, some dried basil, garlic with a dash of white or sweet white wine. Try it! - Elaine Khoo
