Sue's Lovely Homemade pancakes

Weekends are great especially when your missus makes you lovely fluffy pancakes! Serve these with your favourite toppings (frozen bananas, fresh cream, honey, cinnamon powder, etc) and with a cup of freshly brewed coffee - you're ready to start a lovely day!


Ingredients (makes 10 pancakes)
1 egg (large)
Pinch of salt
50 g plain flour
40 ml low fat milk



First, separate the egg white from the yolk. Whisk it till it forms stiff peaks. In another bowl, add the flour, egg yolk and mix till smooth. Fold in the egg white softly so that the air that are trapped in the egg white stays.

Heat up a non-stick pan with a knob of butter. Once hot, pour in using a big spoon and cook in batches. Turn over till both sides are slightly golden brown and the sides crispy. Serve it with your favorite toppings !


Prawn arrabiatta spaghetti

Ingredients

6 tiger prawns
Garlic (sliced thinly)
Arrabiatta mixture
Olive oil
Pasta (any type would do)

Firstly, cook the spaghetti in a hot boiling water (add salt and olive oil) till all dente. At the same time, in a non-stick pan, fry the garlic till golden brown (or to your liking) and then add the prawns. Cook prawns till cooked (pinkish) and then add the arrabiatta mixture (got this from a friend who went to Italy - it's basically a dry spice mixture which is spicy).

Once the spaghetti is cooked, stir it in with a little bit of water. Mix throughly and drizzle a bit of extra virgin olive oil to finish!
