Rosemary lemon roast chicken

Wah ! This is our favourite roast chicken, in fact, this is how I started my hobby into cooking (when it actually tasted nice =)). Yummy !


Ingredients
One whole chicken (trim away the fat)
Rosemary sprigs
Lemon (zest)
Garlic
Carrots
Onions
Salt, Pepper
Extra virgin olive oil
Prepare the rosemary and lemon zest mixture. Chopped finely and mix it with olive oil and good amount of salt & pepper. Set aside. Prepare the chicken. Trim away as much fat ! Too oily la. Pat the chicken dry and then pour over the mixture, ensure that it's well covered (in and out). Put on a roasting pan and roast for 1 hour at 230 Celcius. Halfway through, add in the carrots, onions and garlic as sides. Take it out once it's golden yellow and the drumstick can be removed easily.
