Fried rice with duck meat


Ingredients
Shredded duck meat
A bowl of overnight rice
Sliced onion, garlic
Peas and corn
Soy sauce (1 teaspoon)
Oyster sauce (1 teaspoon)
Xiao Hsing cooking wine (1 dash)

This is a simple recipe that you can make from leftover roast duck. First of all, shred all the duck meat to remove the bones. Then in a hot wok with olive oil, fry the garlic and onion till fragrant. Add in the duck meat and stir fry. Pour in the soy sauce, cooking wine, pepper and oyster sauce.Add the peas and corn, and a dash of water.

Before adding in the rice, add a bit of water to the rice to loosen it (note that you should remove the rice from the fridge and loosen it before cooking). Pour in the rice and fry over high heat till the rice is a bit dry. Season with pepper.
