Squid pasta with Chardonnay sauce

Here's a nice one, spicy and refreshing!

Ingredients
Spaghetti
Squids (cut into rings)
2 chili padi (small red chili)
Fennel (finely diced), garlic
A glass of white wine (Riesling, Chardonnay)

Cook your spaghetti al dente in a pot of boiling water seasoned with salt and olive oil. While it's cooking, stir fry the garlic, fennel in a pan with olive oil. Once cooked, add in the squid and fry a bit before adding in the wine. Season with salt, pepper and cook till the sauce is halved. Add in the red chili. Drain the spaghetti and pour into the sauce. Mix evenly and serve immediately. Best eaten with a glass of cold white wine!

Scallops fried rice

This, as with any fried rice can be completed in 30 mins including preparation. And all it takes is just 15 mins to gobble it all up=)


Ingredients
Scallops (sliced into bite size)
Anchovies (fried till crispy)
Eggs, peas, garlic
Overnight rice

On a wok, heat up the oil and then scramble the eggs. Remove the eggs and the fry the anchovies till crispy beforenstir frying the scallops. Season the scallops with a bit of soy sauce, pepper. Add the garlic, onions, peas and stir fry for a while. Then pour in the rice and mix it all together. Add salt, pepper to taste. Serve with chili in soy sauce! Yummy!!!!

Lotus root soup

Here's a soup for the soul!

Ingredients
Lotus root
Pork ribs or chicken
Red dates
Goose berries

In a boiling pot of water, add all items together and boil for couple of hours. That's it!!! Simple yet lovely!

Sweet sour chicken

This is easily prepared but will require a bit of deep frying

Ingredients
Chicken breast - sliced into bit size
Sweet & sour sauce
Onion, tomatoes, pineapple, celery
Flour and oil for frying

Deep fry the chicken breast which has been coated lightly with flour. Remove and drain once golden brown. Prepare the sweet & sour mixture - add tomato ketchup, vinegar, chili sauce to get the right sweet & sour balance. Add the vegetables including a bit of the pineapple juice. Mix with the chicken when ready to serve.

Smoked salmon

Here's a simple dish that you can prepare easily as a starter. What you need is good smoke salmon which you can get at any supermarket - i would go for the norwegian salmon.

Ingredients
Smoke salmon
Lemon
Dill
Capers
New potatoes
Vinegar
Onion

Parboil the new potatoes, removing the skin first. Then cut it into bite size before mixing it with vinegar, mustard, onions and capers while it's hot. Serve it with the smoke salmon with a bit of lemon juice.

Peach cheesecake

Made by my wife.... all i know is that there's cream cheese, peaches, biscuit base and loads of love!!!

Nasi Ulam!

This is pretty much a salad made out of rice and tons of herbs!


Ingredients
Rice with tumeric
Mixture of herbs such as mint, ginger, lemongrass, etc
Fish (shredded)
Fried shallots

Cook the rice with a bit of tumeric powder. Once cooked, let it cool down to room temperature. Then mix it with all the herbs that you prefer - all chopped up. Add some sugar, lime juice and mix it all up. You can make any nasi ulam with any ingredient you want!
