Sweet potato with ginger syrup

This is simple to make and yet delicious! Just cut the sweet potato in equal sizes. Then add into a pot with water, a knob of young ginger and couple tablespoons of sugar (to taste). Boil till the potato is slightly soft. Eat hot or cold.

Rocket, ham and olives pizza

Lovely home baked pizza served with ham, rocket and olives. Drizzle spicy salsa in top! Delish! To make a pizza, mix 80g bread flour, 20g semolina, 2g dry yeast, 1/2 teaspoon salt and sugar, 65ml warm water. Mix well till it becomes a soft mixture. Pour on a floured surface and knead till a smooth soft dough forms. Let it proof for 30 minutes before rolling into thin round layers. Bake in oven at 220 Celcius till crisp.

Oatmeal raisin cookies

This is a lovely crunchy cookies that's simple to make taken from Martha Stewart's recipe. It's delicious.

Ingredients.
1 1/2 cup oatmeal
1/2 cup flour
1 cup brown sugar
1 teaspoon cinnamon powder
1 teaspoon baking soda
1 cup raisins
1 egg
1/2 cup butter
1/2 teaspoon salt

Mix the butter, sugar and eggs in a cake mixer. Add in the oatmeal, flour, cinnamon and stir till mixed. Add in the raisins. Spoon unto a baking tray and bakeat 180 degrees celcius for 15 minutes. Cool on a rack.

Scrambled eggs on ciabatta

Simple breakfast that's lovely and sumptuous. Get a slice of ciabatta and have it toasted. Then on a pot, place the egg and butter. Then using a wooden spatula, stir the eggs, removing it from the heat once in a while. Once cooked, season with salt, pepper and spoon over the ciabatta. Drizzle some olive oil and a spoon of salsa. Delish!

Bangers and mash

Yummy is all I can say. Freshly made gourmet sausages are always the best!

Ingredients
Lamb garlic sausages
Onions finely sliced
Balsamic vinegar
Chicken stock
Potatoes (Russett)
Butter, baby peas

Fry the onions in a pot till soft and golden. Add balsamic vinegar and cook till evaporate. Add in chicken stock and cook till reduced to a gravy texture. Parboil the potatoes till soft, add peas at the last minute. Drain. Add butter, salt, pepper and milk. Mash till smooth. Grill the sausages till cooked throughly. Serve the sausages on mash potatoes with the onion gravy. Delish!!!

Ginger cookies!

I always love the taste of ginger cookies. So took the chance to bake my very own, luckily it turned out pretty good!

Ingredients
1/4 cup butter
1/2 cup brown sugar
1/4 cup crystalized ginger finely chopped
1 cup self raising flour
1/2 teaspoon baking powder
1/2 teaspoon ground ginger & cinnamon
1 egg

Whisk the dry ingredients till well mixed (flour, baking powder, cinnamon & ginger). Beat the egg, butter and sugar till well mixed. Pour in the dry mixture till form a dough. Make small round doughs the size of one tablespoon and coat it with sugar. Place on baking tray and bake in oven for 15 minutes at 180 Degrees Celcius.

Raisin scones

This is my first try at baking a scone. Not bad!

Ingredients
1 cup of self raising flour
1/2 teaspoon of baking powder
20 ml milk
1 egg
1/4 cup butter
1/4 cup raisins soaked in orange juice

Using a food processor, blitz the butter, flour and baking powder. It should look like bread crumbs. Then pour into a mixing bowl and make a well at the center. In another bowl, beat the eggs, milk and then add the raisins (drained). Pour the egg mixture into the flour mixture and mix till it becomes a soft dry dough. On a floured surface, roll till 3/4 inch thick. Use a cookie cutter to make six even circles. Brushit lightly with milk and bake in oven for 15 minutes at 205 Degrees Celcius. Let it cool on a rack and serve with your favourite jam, butter and fresh whipped cream.
